NH 8 follows THALI (plate in which meal is served) concept which is characteristic way in Rajasthan and Gujarat.
A typical thali consists of more than 25 dishes.
It begins with Welcome drinks: Chaach (Buttermilk)and Jaljeera, followed by 3-4 starters which is a mix of steam and fried ones satisfying individual’s taste buds.
Gravies are 7-8 in number comprising: Panchmela Dal, Rajsthani and Gujarati Kadhi, One Potato Gravy, Any of Gatte/Mangodi/Papad/Rabodi, One Paneer Gravy, one seasonal vegetable.
In breads we serve Baati, Phulka, Bajra/Makki ka Rotla, Laccha/Reshmi parantha, mirchi/masala/palak poori.

At the sweet note our signature dishes are Malpua, Jalebi, Rabdi, Moong Dal Halwa, Srikhand and many more.
The package is incomplete without pickle, papad and chutneys which include: Dhania/pudina /imli ki Chutney, Kachumber salad, Khichiya papad, aam/neembu/mixed pickle.
Customers don’t hesitate to have this rich food because beeda (paan), anardana and other churan digestives are there.
